The Crystal Restaurant is the main hotel restaurant and is open daily for breakfast and dinner. Lunch is also available on a Wednesday and Saturday (£25 for 3 courses) and Sunday (£29 for 3 courses, including coffee). It is the original hotel restaurant and features a high ceiling, marble pillars and chandeliers. The Crystal Restaurant is a large space and can cater for dinner for two or larger gatherings and is where guests on seasonal breaks dine.

Head Chef James Penn and his kitchen brigade create seasonal traditional English and French cuisine in a relaxed atmosphere. The menu features James’ selection of Sussex meats and Newhaven fish.
